The experience

Ceylon cinnamon is not the cinnamon you know

Most of what is sold as cinnamon is cassia — a coarser, darker bark from a different tree, harsher on the palate and much cheaper. True cinnamon, Cinnamomum verum, is native to Sri Lanka and still grown mostly here, in the wet southwest.

The peeling is the thing to see. A cutter takes a stem, rubs the outer bark off, scores the inner bark and lifts it away in a single sheet, which is then rolled into quills and dried. It is done entirely by hand, by peelers who trained for years, and no machine has replaced them.

Estates around Ahangama and Mirissa run mornings that end with a table — usually rice and curry cooked with what grows on the property, eaten under the trees. It is the most quietly impressive food experience on the south coast and almost nobody books it.
